About Heidelberg Cakes
Heidelberg Cakes has been providing beautifully designed celebration cakes and desserts to South Australian customers since 1991, and has been exclusively Gluten Free since 2020. Our team of experienced bakers, chefs and cake decorators offer knowledge in all styles of custom cakes. Our mission is to provide the best service and product possible. We want to create memories that last forever, with a cake that looks so good and tastes so delicious you cannot believe it is Gluten Free!

James Schmidt
Manager and Executive Chef
James has worked in the baking industry for over 30 years, from his parents’ bakery: Budapest Cakes, to opening Heidelberg Cakes with his brother and then working alongside his wife Carolyn.
As a Coeliac, his passion and commitment is to produce cakes and desserts which taste so delicious you cannot believe they are gluten free!
This has been continually recognised by our many loyal customers over the years.
He also enjoys spending time with his family (he’s now a Grandpa!), travelling, caravanning and gardening.
Kate
Production Manager and Baker
Kate is a qualified chef and has worked as the baker at Heidelberg Cakes since 2003!
She is responsible for the delicious cake smells wafting into our store.
When not baking up a storm, Kate enjoys reading and spending time with her family.
Stella
Sugar Artist, Fondant Icing Specialist
Stella has worked at Heidelberg Cakes since 2013, and achieved a Certificate 3 in Patisserie from China. Upon joining the Heidelberg family, she quickly became the fondant icing specialist and works closely with James on wedding cakes and speciality custom cake designs.
She is a highly talented cake and icing sculptor and wedding cake artist. You have probably seen her winning entries in the Masters Cake Decorating Section at the Royal Adelaide Show!
Her specialities include 3D sculpted cakes, 3D modelling and free-hand piping work.
She lists her greatest achievement as becoming a mum to her beautiful sons, Samuel and Jackson.
Jess
Assistant Manager
Jess holds a Certificate III in Patisserie from Le Cordon Bleu and has been part of the Heidelberg Cakes family since 2014.
Driven by a passion for her craft, she spent several years broadening her expertise across a range of commercial kitchens – including bakeries, a chocolate factory, and a cupcakery – before returning to Heidelberg Cakes in 2022 in her current role as Assistant Manager.
Jess is an active member of the Cake Decorators Association of South Australia, serving as Vice President of the Adelaide Central Branch
Away from the kitchen, Jess cherishes time with her husband and their two beloved dogs – a rescued Staffy and a miniature Dachshund
